Falmouth Oyster Festival opened its doors today, with cooking demonstrations and live music running throughout the day.
Mayor of Falmouth, Steve Eva, kicked off the day with an opening speech.
Award-winning chef Emily Scott, from the St Tudy Inn, gave a demonstration on how to prepare scallops and sea bass.
Steve Eva told Nub News: "This is extremely important to Falmouth and Falmouth is very good at running festivals, but this started off as a humble beginning at the watersports centre which only lasted one day and they had an evening event to raise some money at the polytechnic.
"Since then, over the last 23 years, it has expanded to what is in front of us today which raises thousands of pounds, some for charity and some to run further events throughout the town.
"These events are run by a lot of volunteers and dedicated people which Falmouth could not do with."
There was a cooking demonstration courtesy of Nick Batten, Ashley Carkeet and students from Cornwall College.
Samantha Groom, Oyster Festival Director, highlighted the importance of events like this for Falmouth, she said: "This event brings in a lot of visitors from around the county at a time when they might not be coming to Falmouth.
"We get a lot of out of county visitors and they like the authenticity of it, it is not just a food festival.
"The thing about the Oyster Festival is that it has a reason for being, it is about celebrating something that is unique to Falmouth and that is what makes it special.
"It is really positive and shows how successful it is because it has been running for 23 years."
