New deli will bring flavour of the Middle East to Falmouth

A popular Truro deli is expanding into Falmouth - run by a former Master Chef contestant.

Kate Attlee was a Master Chef quarterfinalist in 2018 and established Sabzi in Truro the following year.

Sabzi, a Persian word for 'green herbs', is opening on Arwenack Street at the end of July.

Kate was born in Cornwall to an Iranian father and British mother - she has been surrounded by international flavours throughout her life.

She spent a number of years in London at River Cafe before returning to Cornwall to work at the One Eyed Cat in Truro.

That time spent as a chef gave her a passion for service - something she has brought into Sabzi.

"The business is very much designed to give people really spectacular food with the best service they've ever had," Kate told Nub News.

Sabzi serves a menu that changes every day. The team cooks seasonally bringing people a flavour of the Middle East whilst striving to be environmentally sustainable.

Kate continued: "We cook with the best ingredients available in Cornwall and the UK. However, the heart of what you'll taste is from the Middle East."

Discussing the move to Falmouth, Kate added: "Falmouth feels like a really natural next home for Sabzi. The demographic of people in Falmouth is perfect and I feel very excited to offer what we do.

"It is a market that is really ready for what we do. It feels like a really good place to put Sabzi.

"Everything will be cooked on-site in Falmouth. The menu will be matching across both sites. For people who have been to Sabzi before, it will be what they have tried before. It will be the same vibe, everything homemade, savoury menu, sweet menu, things being cooked fresh in the morning, and a beautiful selection of deli shop items."

With the opening of the deli, Sabzi is also hiring new staff. Kate has brought in Darren Kerley as Head of Food to make a strong core team that will help her run both sites.

She said: "I want to build a team across both sites to keep it all really coherent. The idea is that if you went to Truro or Falmouth the feel and the team would be the same."
