At the weekend, Falmouth welcomed a new eatery to the town as RoBo opened at Admiralty House, Bank Place.
RoBo is an Asian canteen with a menu that combines Cornish ingredients with Asian flavours and recipes.
Nub News sat down with Owner Will Gould and Head Chef Dom Gill to take about the venture.
Will Gould told Nub News:
"I have been down in Cornwall for 10 years, I used to jump on the ferry and come over to Falmouth.
"Walking past this spot in its various forms I never actually came in, it always seemed shut."
Chef Dom Gill said:
"I remember when it was Pippas Steakhouse which was way back when, that was about 15 years ago and then it was Three Amigos for about 10 years, and then the Greenhouse most recently.
"Vegan and vegetarian food is quite a big thing in Falmouth, since we have opened we have sold a lot more vegetarian food than anything else.
"When we did the menu we wanted a strong vegetarian/vegan aspect to it.
"We wanted a lot more balance here between seafood, meat and vegetables."
The response to the canteen has been really positive, in only the fourth day of trading RoBo has had return customers.
Turning his attention to Coronavirus and the potential impacts on opening an eatery at this time, Will continued:
"We need to weather the rest of this Covid storm for the rest of this winter, we are here to stay and we have a lot more ideas and we want to get the core base of our food in and show people that is what we do.
"It is exciting and looking forward to digging into the menu a bit more."
The entire menu is available to takeaway, a decision taken because due to the current restrictions they weren't sure if they would even be able to open.
On the layout, Will describes it as "a nod to an Asian theme but not rammed down your throat" there is a big red theme, with Anime and Manga through the canteen with a cosier area towards the back and a livelier bar area.
Dom added:
"We don't really have a demographic, I think it will appeal to students as much as it does to local business people and residents in and around Falmouth.
"It is a bit different, something that isn't catered for in the town as it is. There is a lot of superb eateries in the town and we want to be part of that."
