In conversation with Proper Pasties on the new pasty garden and what makes a good pasty?

By Joseph Macey 16th Sep 2021

Tucked away down Upton Slip is Proper Pasties, a takeaway pasty kitchen serving Denzil Trevithick pasties, sausage rolls, and crab baps.

Proper Pasties even has its own pasty garden, the stuff of dreams I know, unfortunately, no pasties growing on trees.

Last week we met up with the owner of Proper Pasties Sue Morris to chat about reopening, what makes a good pasty, and the new pasty garden.

Sue has been running the business for nearly three years, not opening much last year.

But Sue revved up the ovens again in mid-April after a little while being closed.

"It is really good to be back in a routine and nice seeing everybody again," Sue said.

The pasty garden is brand new as it was formerly in the courtyard at The Wheelhouse. Tina (from The Wheelhouse) helped to transform the new garden for Proper Pasties.

So what makes the best pasty? Sue said:

"The pastry and the seasoning are the main two things, Denzils pasties use really good ingredients, they go to all the local farmers and butchers sourcing all the best things to put in them. The pastry and the seasoning I reckon because without the seasoning there is no real taste.

"We always get the crab locally sourced, usually from The Wheelhouse and they get it from Penryn, maybe St Agnes, Newlyn, wherever is best, or whoever has got them."

Sue added:

"I think everyone has got their own tastes and what they like in a pasty but we have a good following for ours."

Proper Pasties is open Wednesday - Saturday 10am till 2pm.
