Meet the owner behind Falmouth's newest street food van

If you take a walk down Cliff Road, along the seafront, and you want to stop somewhere for a coffee and something to eat, where do you go?
Look no further, in the middle of the stretch along Cliff Road, just off from Gyllyngdune Gardens is Lushies - is a brand new street food van.
Lushies, run by Nicola Jones, opened along the seafront this month selling Cornish-seafood, fish, salads and cakes to takeaway all from a new catering van.
Nicola has been a chef all her life, jobs including teaching at Jamie Oliver's Fifteen and Head Chef at Caerhays Castle.
After losing her job in June due to covid Nicola took the plunge and bought the Lushies van.
"I want to promote our fantastic Cornish produce," Nicola told Nub News, supporting local fishmongers during an uncertain time for fisheries in Cornwall due to Brexit.
Nicola's ethos is to have as much Cornish produce as possible, stocking Cornish drinks, Cornish cakes, Da Bara bread and buns.
"I am trying to do fresh, healthy and tasty food," she said.
On the menu is Cornish crab sandwiches, Cornish mussels, super salad boxes, Frittata, homemade soups, filled rolls, cakes and Cornish Orchard drinks.
Nicola is hoping to stay open until the end of October and is there most days (weather dependant) - open 10-4pm.
Despite only just opening, Nicola praised the community support, adding:
"It has been a fantastic response from everyone so far, we have had some lovely things said about us on social media."
How does Nicola describe the business in three words?
"Friendly, Cornish and fresh."
