Culture Falmouth: New restaurant is a unique dining experience
Journey through different flavours, textures, and smells with food you might have never experienced before - Culture has opened in Falmouth.
Based on Custom House Quay, Culture celebrates local produce and hyper-seasonal cooking with a menu of nature-inspired cuisine.
'The Journey Menu' is a story told over numerous courses guided by seasonality and daily availability. There is a sample menu but you don't discover what you will eat until it arrives - something fascinating and refreshing.
Hylton and Petronella Espey are the brains behind Culture - a long-held dream for the pair. Falmouth residents will be familiar with Hylton's work after he built up a glowing reputation as Head Chef at Rastella, the restaurant at Merchants Manor.
During his six years at Rastella Hylton was awarded 3 AA Rosettes and gained a reputation for inventive cooking that championed Cornish produce.
A lot of thought has clearly gone into the style of the restaurant. Hylton and Petronella have created an intimate space with an open kitchen where you can watch Hylton piece together the dishes.
Staff and welcoming and knowledgeable. There is a discussion as the food is brought over, what's on the plate, and how it got there - enhancing a brilliant experience.
A perfect way to kick off the menu with 'Flurry' - a selection of snacks as you settle in. Mackerel on a bed of gem lettuce, a wild garlic caper, a smoked Falmouth mussel wrapped in a kale leaf, and 'scratchings' finished with dried scallop oil.
Some of the standout dishes for me were:
'Golden Grains', 100% wholewheat bread with wheat grown from just outside Truro, it is milled by Hylton and accompanied by a miso butter. Who knew bread could be served like this? Very tasty.
'Nansidwell', Mylor scallops, rock samphire, and a smoked roe butter. An outrageous trio of scallops, fresh, juicy, and even an extra bit of bread to clear up that bold sauce.
'Pasture', Cornish chicken served with cabbage with potato foam, chicken breast and chicken thigh, sprinkled in a chicken crumb. What a way to celebrate everything chicken. A really hearty dish with strong flavours and different textures, juicy chicken, a delicate slice of cabbage, and the crunch of chicken crumb.
Alongside the Journey Menu (£65), you can also add the wine flight for £35. A glass of wine is paired with each of the dishes. An impressive glass wine cellar is situated in the corner of the restaurant. Both Hylton and Petronella are as passionate about wine as they are food with Hylton studying viticulture at university and working with two South African vineyards - Remhoogte Wine Estate and Alheit Vineyards - both of which feature on the wine list.
Culture is well worth experiencing, it is perfect for special occasions, birthdays, anniversaries, the odd date night, or you might just fancy trying something new.
